An interview with the owner of Mama Nina’s Oneonta Pizzeria

Interviewer: I’m talking to Taso Georgakopolous. He’s the owner of Mama Nina’s pizzeria in Oneonta New York at 299 Main St. It’s the oldest pizzeria in Oneonta if I understand that, right?

Taso: You are correct. As a matter of fact we are going to be featured in the Oneonta Historical Society within the next couple of weeks. That’s pretty good news for us. We’ve been around since 1971, and that makes us the landmark for pizzerias in Oneonta.

Interviewer: Wow that is a long time. That’s before I came here as a student.

Taso: Yeah, that is a long time as far as pizzas concerned.

Interviewer: When did you take over?

Taso: It’s been seven solid years since it took over the place. It’s been challenging, it’s been good, but basically we’re on top of our game now.

Interviewer: Yeah, I think you are. There are a lot of good pizzerias in Oneonta. I mean, I never met a pizza I didn’t like (unless it was a frozen dough pizza, which I can’t stand) but I think you guys stand head and shoulders over the rest.

Where did you guys learn your pizza skills?

Taso: Well to be quite honest, I’ve been in the restaurant business all my life. We did have a couple of pizzerias down in New York city. My brother and I ran one, and my father with a crew of staff used to run another one. That’s where I got most of my experience with pizza–making, experimenting with dough, cheese and different types of sauces.

But I’m going to say that I honestly believe that I perfected my pizza making skill at this restaurant right here at Mama Nina’s.

Interviewer: I know you competed at some kind of pizza competition. Could you explain about that?

Taso: Sure. Every year, Hartwick College here in Oneonta hosts what they call “PizzaFest.” Basically they get a hold of all local pizzerias (usually there is between 10 and 15 – generally 10) and they have a pizza cook–off.

It’s pretty exciting and it lasts about six hours. Each pizzeria brings its own products. The faculty, the freshman and senior classes choose which pizzeria they consider the best.

Interviewer: That’s a pretty good idea. I remember seeing some of your pictures of your pizzas there. They were the most amazing pizzas ever saw.

Taso: We’ve competed seven times so far, and I’m going to tell you, we won each of those seven times.

Interviewer: Well you can’t beat that!
